Carrot Soup Easiest Dinner

Ingredients

  • 1 tablespoon Avocado oil

  • 1 medium onion

  • 2 cloves garlic

  • 5 cups chopped carrots

  • 5 cups water

  • Fresh Oat Milk drizzle topping

How to make carrot soup


  1. Heat oil in a Dutch oven over medium heat. Add onion and gralic; cook, stirring occasionally, until softened, 4 to 6 minutes. Add water bring to boil. Stir in carrots. Bring to a lively simmer over high heat. Reduce heat maintaining a lively simmer. Then cook until very tender, about 30 minutes. Puree the soup until smooth. (Use caution when pureeing hot liquids.)
